Yesterday was Engagement Day! I have been feeling anxious the past 4 days knowing that one of my best friends was going to get engaged! Anyone that knows me knows that secrets aren’t a strong suit of mine so when Engagement Day was finally here I was about ready to blow!
After Bruce got down on one knee (and she said yes!) he brought Lauren over to Fraser & Laurel’s place where they made the 6 of us an amazing dinner- including a vegan curry dish! The recipe came from Viji’s Indian Cuisine cookbook (Viji’s is also one of Vancouver’s best restaurants) and it’s called Vij’s Coconut Curried Vegetables.
I couldn’t find the recipe online and I don’t want to risk getting sued (if you read my previous post you know I’m currently unemployed and couldn’t afford the legal fees). But I can tell you there was onions, curry leaves, mustard seeds, coconut milk, canned tomatoes, chili spices, and chopped veggies including eggplant, peppers, and cauliflower.
Laurel and I have been talking about an Anne of Green Gables marathon soon so hopefully I can get some more amazing cooking secrets from her then but until then- back to Engagement Day!
