Simple Potato Wedges with Dijon Dip

The title pretty much says it all!

Do you ever come home and look through your fridge and wonder how you have nothing to eat just days after going grocery shopping? It’s super annoying.

I had some potatoes and decided to experiment.  I just sliced a Russel Potato, brushed on some olive oil and seasoned with paprika and salt.

Then I just mixed some veganaise with Dijon mustard and tarragon for a zingy dip! Now I’m faced with the challenge of leaving some for Rich when he comes home….
