I have the apartment to myself this weekend and I’m pretty pumped to be spending quality time with just the three of us (me, the cat, and red wine):
After my pedicure I came home and felt like something a little decadent and decided to give traditional mashed potatoes a twist.
I simply added about 2 tablespoons of thick teriyaki sauce to my mashed potatoes before topping it with steamed bok choy, broccoli, and stir fried tofu with onions. I stir fried the veggies in soy sauce with some lime and agave nectar just to make them pop from the potatoes but you could definitely use teriyaki for everything and it would still be super tasty. I topped it with chopped green onions, sesame seeds, and a slice of lime.
The result was lip-smacking but not good if you’re looking for a light tasty meal because I’m definitely going to have to hit the gym tomorrow!

Haha thanks! I think she likes posing for them. I got a hot pink/red colour- all ready for my staggette next weekend!!

I never thought to add anything to mashed potatoes besides butter; I like your twist!
Thanks! I think I discovered it when I was out of butter! Agreed- nothing beats a big glass or red and a snuggle with a kitty!
