This was an idea that I had mulling around in my head for a while and I wanted to wait until we went back up to the cabin so I could use the BBQ but in the end I couldn’t wait. Going off the high of my recent grilled sandwich with vegan mozzarella and pear success, I decided to try an asian sandwich and the result was full of flavor! (although I’m beginning to think you can’t go wrong with a ciabatta bun).
First I mixed a little bit of horseradish with veganaise and spread it on the ciabatta bun. I then fried up a piece of extra firm tofu until it was nice and crispy and then poured some teriyaki sauce on it. (Make sure your brand doesn’t use fish oil!)
I chopped up some cabbage with carrots and tossed it with my favorite go-to dressing: soy sauce, lime juice, and some agave.
I then piled them both on the ciabatta bun and added a slice of pineapple.
Next time I might even double up everything or add cilantro…
It’s cloudy in Vancouver today which means that I can relax without the frantic urge to get outside for every moment of sunshine.
